Role and Responsibilities
Guelaguetza's servers are motivated in ensuring that patrons have an enjoyable dining experience by providing quality customer service. Servers work in the front of the business taking orders, serving food, drinks, removing dinnerware from the table in a timely manner, multi-tasking various front-of-the-house duties, and collecting the bill. Servers are expected to have detailed knowledge of portions, ingredients, and/or potential food allergens, and be able to answer patrons’ questions regarding the menu. On the job-training is usually necessary. Servers work closely with other wait staff, the kitchen, and the bar, to ensure the restaurant is operated efficiently. Server duties may require being on their feet for much of their shifts, working in shifts and/or during weekends and holidays. A food handler card/permit is also sometimes required.
Must be able to work in a fast-paced environment. Must work well with others, teamwork is of utmost importance. Side-works are assigned on rotation and are usually performed when starting daily operations, towards closing time, and throughout working hours as deemed necessary. Side-work tasks include but are not limited to:
Maintaining coffee area by restocking condiments, sweeping, light moping, light use of cleaning substances.
Opening servers will make fresh waters and coordinate with kitchen and bar to ensure readiness prior to begin service.
Entering the walk-in (cold room) as needed.
Refill and restock to-go boxes, utensils, and other complimentary items to fulfill orders.
Covering dinnerware and snacks with plastic film to preserve overnight.
Keep serving trays clean.
All restaurant staff is encouraged to keep up to date on related restaurant industry practices. Mandatory staff training involves both theory and application of Alcoholic Beverage Control Laws, among other topics such as recognizing and dealing with obviously intoxicated people, the LAPD’s Minor Decoy program, ABC inspections conducted by law enforcement, how to ID those who want to drink, fake ID recognition, smoking/vaping laws at ABC locations.
Physical Demands:
Server duties may require being on their feet for much of their shifts. Frequent walking for long periods of time. Continual use of manual dexterity and gross motor skills. Lower back support belts and dolly are available on-site for occasional heavy lifting of up to 40 lbs time commitment
Servers may be required to work in shifts and/or during weekends and holidays. Emphasis on punctuality. May also be required to cover for other wait staff during breaks and meals, and/or fill in for absent staff as needed.
Requirements: High School/ GED (or foreign equivalent), fluent in English and Spanish and minimum 2 year experience.

HOST/
HOSTESS

Guelaguetza's host/hostesses are responsible for greeting guests at the door. The Host/Hostess seats and presents clean menus to guests in a friendly, professional and quick manner. Must be able to determine accurate wait time based on Guelaguetza’s procedures. Visually scans restaurant for clean, unoccupied tables. On the job-training is usually necessary. Hosts/Hostesses work closely with other wait staff to ensure the restaurant is operated efficiently. Will require being on their feet for much of their shifts, working in shifts and/or during weekends and holidays.
Must be able to work in a sast-paced environment. Must work well with others, teamwork is of utmost importance. The work station may be drafty due to its proximity to the door and to the stage, the noise level can be loud. Side-works are assigned on rotation and are usually performed when starting daily operations, towards closing time, and throughout working hours as deemed necessary. Side-work tasks include but are not limited to:
· Clean menus.
· Prepare kids menus and crayons.
· Wash, dry, and roll utensils (weekends require more activity).
· Enter walk in (cold room), involves slight change in temperature.

LINE COOKS

Job Description
Line Cooks are responsible for a large part of the preparation and production of food and dishes served to order. They work in the back of the house preparing both large and small quantities of food to fulfill orders, multi-tasking various back-of-the-house duties. They help prepare Catering orders and attend events to help serve the food. Line Cooks hold detailed knowledge of portions, ingredients, and/or potential food allergens regarding the menu. On the job-training is usually necessary. Line Cooks work closely with other kitchen staff, wait staff, and the bar, to ensure the restaurant is operated efficiently. Line Cooks’ duties may require being on their feet for much of their shifts, working in shifts and/or during weekends and holidays. A food handler card/permit is always required.
Role and Responsibilities
Maintain a neat and professional appearance. The first two (2) sets of uniforms will be issued to all new kitchen staff at no cost, all uniforms thereafter will be individually purchased by employees.
Manage the production of high quality dishes following the established menu, portion sizes, and all basic prep procedures used in the kitchen.
Maintain a system of proper labeling and storing of cooked foods.
Monitor product freshness and rotate out old products based on dates cooked.
Create a match between the dish’s aspect and its taste.
Ensure preparation lines are properly filled and supplied.
Provide best results in minimum time, and maximize the use of available resources.
Maintain high standards of hygiene, cleanliness and safety throughout all food prep areas and all food storage areas at all times.
Discuss with Head Chef and other kitchen staff daily prior to service the availability of items on the menu, including specials, food preparation, ingredients used, potential of allergens and substitute items to be recommended.
Fulfill orders to dining area, the bar, and to-go by preparing orders in a timely fashion. Direct any special requests from clients to the Head Chef.
Call out tickets, check time allowed to make a dish and keep kitchen staff informed on meal progression, correct temperature and appearance of food.
Check dishes for cleanliness and presentation.
Help prepare Catering orders and attend events to help serve the food.
Ensure machinery and equipment functions properly.
Deal with complaints or problems with a positive attitude and inform these to the Sous Chef, Head Chef, or in the absence of such, inform the shift supervisor and/or General Manager.
Assist with receiving deliveries and creating inventory lists as requested by the Head Chef.
Make requisitions of food products and supplies as needed and required by the Head Chef.
Line Cooks must occasionally perform deep cleaning duties such as sweeping, mopping, washing, and scrubbing if necessary at the beginning, end, and during regular working hours.
Attend all meetings, training, career updates, and information sessions, as scheduled by management or to comply with local, state, and federal regulations.
Overall, contribute to team effort by accomplishing related results as needed.
