400 CONEJOS
400 Conejos Espadin Joven is produced by maestro mezcalero Don Tacho in Santiago Matatlan, Oaxaca. Don Tacho carefully selects the agave Espadin when they have reached maturity after 8-10 years. This mezcal is traditionally produced using a stone oven (horno), horse-drawn tahona, and copper distillation.

CUISH, ESPADIN
This exported release of Mezcales Cuish Espadin was produced in January 2018 by José Santiago using agave Espadin (Agave Angustifolia) in Santiago Matatlán, Oaxaca. The agaves are cooked in an underground over and then crushed using a horse-drawn tahona. Next, it is fermented with well water in and native wild yeast in Montezuma cypress vats. Lastly, it is distilled twice in a copper still. The final distillate is adjusted using twice puntas and colas.

LA LOCURA, SAN MARTINERO
Lalocura San Martinero is made with a Karwinskii agave that is locally referred to as San Martinero. The agave is a larger, thicker sub-species of Karwinskii that can also be called Barril in other communities. A similar Karwinskii is also called Sanmartin in Ejutla, which is not terribly far from Santa Catarina Minas, where Lalocura is made. Maestro mezcalero Eduardo Angeles cooks his agave with Encino wood. He mashes the cooked agave by hand with wooden mallets, ferments the agave in open-air cypress vats for twelve days, and double distills this mezcal in small clay pots.

MEZCALOSFERA, ESPADIN & JABALÍ
Mezcalosfera Espadin/Jabali is produced by mezcalero Victor Ramos in Miahuatlán, Oaxaca. In December 2017, the agaves were cooked together in an underground over, crushed with stone, and naturally fermented for 6 days. Next, it was distilled twice in a copper refrescador still and adjusted to a final ABV of 47.71% using puntas and shishe. The final batch size was 582 liters.
